Apple Cheese Bread

Wonderful Snack Bread!
Cream shortening and sugar, beating well. Add egg and pie filling. Combine flour and next 4 ingredients; gradually add to apple mixture alternately with milk, beginning and ending with flour mixture. Stir well after each addition. Stir in Cheddar cheese and walnuts. Spoon batter into a greased 9- x 5- x 3-inch loaf pan. Bake at 350 degrees F. for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove bread from pan and cool completely on wire rack. Yield: 1 loaf.

California Crab Salad

So Easy but So Good!

Mix first three ingredients together and then add Miracle Whip to desired consistancy. Refrigerate over night and then serve on bed of lettuce or with crackers. Can be served as main dish. In summer I use vine ripe tomatoes, cut them like a blossom and fill with crab salad for a delicious luncheon salad.

Cheesecake Crème Dip

Fruit Dip That Is Like a Dessert!

Combine marshmallow crème and softened cream cheese. Mix until well blended. Makes 2 cups. Serve as fresh fruit dip.

Chili Cheese Quiche

Delicious for Brunch or Breakfast

Preheat oven to 400. Butter a 9" x 12" x 3" glass dish. Blend eggs, cottage cheese, baking powder, salt, Tabasco sauce, and flour in blender. Stir in remaining ingredients. Pour into prepared dish. Bake at 400 degrees for 15 minutes, then 350 degrees for 25-30 minutes. Eggs should be completely set. Cut into appropriate size squares. Serve warm or cold.

This is simple to make and can be kept warm wrapped in several layers of newspaper to be served at a function.

Chunky Chicken Chili

Tex-Mex Chicken

Spray large nonstick saucepan with cooking spray. Heat over medium heat until hot. Add chicken, onions, celery, carrots, and garlic; cook and stir until chicken is no longer pink. Stir in salsa, tomatoes, tomato sauce, chili powder, and cumin. Bring to a boil and reduce heat. Cover and simmer 30 minutes, stirring occasionally. Stir in garbanzo beans and green pepper; simmer until thoroughly heated. Serve over rice. Serves 6.

Cold Rice Salad

Exotic Curry Rice!

Bring stock to boil. Stir in rice and return to boil. Lower heat: cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. Cool. Drain artichokes, reserving marinade and chop. Add to rice with onions, olives, green pepper, celery and parsley. Combine reserved marinade with the curry, mayonnaise, salt and pepper. Toss with rice and mix thoroughly. Refrigerate until ready to serve.

Veggie Dip!

Blend all ingredients together. Great for vegetable dip.

Easy Crab Canapé

So Good You Can't Eat Just One!

Rinse and drain crabmeat. Pack on top of cream cheese. Top with chili sauce. Serve with Waverly Wafers or your favorite cracker.

Greg's Home Cooked Pot Pie

Great Place for Leftover Meat and Vegetables!

Put all ingredients together and put in pie crust. Bake at 375 degrees until crust is browned (approximately 45 minutes)

Hot Spinach Hors D'oeuvres

Popeye Would Love This!

Cook spinach and drain well. Mix all ingredients together. Chill 2 hours or overnight. Roll into balls. Bake for 30 minutes at 300. Can be frozen after made into balls, but do not bake until ready to serve. Yields 120 balls.

Rhubarb Quick Bread
Great with your morning coffee!

Mix together brown sugar, egg, oil, vanilla and buttermilk. Add flour, salt and soda. Fold in rhubarb and nuts. Pour into 2 greased 9 x 5 x 3 inch loaf pans. Sprinkle on Topping. Bake at 350 degrees for 60 minutes. Cool before removing from pans.

Skillet Cabbage

This Is The Best Cabbage Recipe Ever!

Melt butter in a large skillet. Add chopped veggies. Cook uncovered until tender. It will brown a bit if you give it time. You need to start with a large skillet full as it will reduce by about 1/2 with cooking. Tom likes to put vinegar over his (must be his English Roots).

Sour Cream Cornbread

Different Twist to "Old-Fashioned" Cornbread

Combine corn, sour cream, eggs, and oil; beat well. Combine cornmeal and baking powder; stir into corn mixture. Pour into a greased 10-inch iron skillet or 9x9 cake pan. Bake at 400° F. for 30 minutes or until done. Serves 8.
